I fell off the earth for a few there I've been crazy busy!

But I have been running which is good but bad because my heel is a bit achy, but at least no pain!

2 slices of cheese pizza from Chuck E Cheese boys brought home great Report cards so Pop's decided The Chuck was in order!

I've been tracking my intake on thedailyplate.com and you know I lost about 25 lbs on that site from the time I had E to now...ahem I've gained a few of that back..cough, cough.
It's quite handy!
Tomorrow I will be walking not running my foot is sore but not in pain thank goodness!
I hope I don't wake up in pain...I don't think I will.

late night snack:
small cup of coffee w/ fat free Skinny Caramel Macchiato creamer ( a little less than a TBSP)
Banana bread

I also had a Duvalin. It's a tiny Mexican candy, like a Nutella spread...about 80 calories. As bad as my sweet tooth was...it was worth it.

Walked Nie for 2 miles this morning. More of a stroll really, my foot is still bothering me so no power walking until much later.

I didn't finish my food but ate of each serving, maybe less on some.
But I did have two rolls :(
And a mix of sweet/unsweet tea

Tonight I walk Miss Nie for 4 miles..hope your ready Nina!

Walked only 2 miles my heel started to act up, which was upsetting Nie and I were really enjoying the weather.

Dinner:
Veggie pasta thing that was pretty nasty! I'll never buy that brand again, we doctored it up w/ left over ground turkey and some shredded cheese.

Had a brownie...so glad they are gone!

Aye Dios Mio!! 10-5-10

So I've started my month off not so good. First off I have Plantar Faciitis. And you know what it sucks!
I have to wear orthotics (over the counter ones) and running shoes ALL THE TIME! I'm a flip flop kinda gal while at home or plain ol bare feet.
So this is killing me worst of all I can't run...nope I can't. So I've been walking, eating not so hot but doing some walking with Nie.
I was going for a 4 mile walk today and remembered I have class tonight. My schedules been off since the boys have been home these past two days.
Eating not so hot well there's no excuse. I have to buy healthy on the run meals you know?
And well I went to the State Fair yesterday and who eat's healthy there???!!!

Breakfast:
Drank a Yogurt.

Lunch:
Mac-cheese
Bunless turkey dog.
I just ate what the boys ate, I hate that I'm doing this but ugh, I was in the process of doing homework...3 HOURS of homework!

I so don't want to write this!
Had two of the cookies the boys made, they were halloween sugar cookies.
Stole some of Little E's fritos

Dinner:
1 taco w/ turkey meat
Instead of another taco I put some shredded lettuce on my plate w/ taco meat, instant taco salad.
Diet soda

After my exam I found I had a flat, Nick came to help me and when I got home we cracked open a beer...our versions are a coke for him a diet soda for me.
And I had two more cookies :(.

I always thought people who ate due to "stress" was such a cop out. Well I think it's true. I have two exams coming up, an online thread for Psychology and not to mention mountains of homework, room mom stuff, and oh that doesnt even include housework!

Skipped, went up to the school w/ the boys to help w/ popcorn and didn't get out til 11:30.

Lunch:
Nick called for me to meet up w/ him for lunch.
I had chicken enchiladas, so very fattening.

9-29-10

Well this past weekend at our little cousin's birthday party they had this type of fruit salad thing.
I thought it was diced fresh fruit in a bath of yogurt. YUM! So I call my cousin to find out the name brand used. I loved it! I usually drink Mexican yogurts but there was something about this particular one used and I just couldn't put my finger on it. Well my cousin and I played phone tag and dinner was started, off to school I went and I figured I'll call later.
Mom call's me on my way to class and I tell her if she's ever had this yummy fruit thing.
She said Yup!
What kind of yogurt shall I use I asked her and then she said..."none"
Huh?
Yeah it's not yogurt, but sweet condensed milk and sour cream, mixed up w/ some juice.
Well that doesn't sound too healthy..does it?
She told me since I had La Lechera (sweet cond.milk) in a squirt bottle I can make it healthier for myself so that's just what I did!

*A few tablespoon of La Lechera
*fat free sour cream (which was pretty tricky to find!)
*few TBSP of OJ
*chopped up fresh green apples, strawberries, grapes and pineapple.( This made a giant batch so I can feed off it for a few days.)
Mixed up the wet ingredients and tossed the fruit in as I chopped.
YUM!

Breakfast:
1 C fresh fruit salad yogurt type cup
Water

On a different note my foot seems to be healing so I can presume walking and running. It was really bothering me for a while, here's to a healed heel!

We had breakfast for dinner, I was at a dinner loss so this was quick and I was tired!

I was done w/ snacking but both Nick and I ate pretty light so we were both hungry.

YAY I had breakfast!
1/2 serving of chocolate Malt o meal
1 slice whole wheat toast w/ a tsp of the yummiest honey ever! It's spreadable, creamy, natural and brought to me straight from Europe! Thank you Amina. When it's gone I shall cry.
Water

lunch:
Made time for breakfast and didn't really have time for lunch!
Drank a yogurt on the road.

Snack:
Really hungry nothing a banana and some nuts can't help with.
Tonya...no mental images please!

Dinner:
Frito Pie...I know, I know Sooo not healthy. Only real unhealthy thing in this dish was well the Fritos.
Everything else I used was pretty okay
I used 98% fat free Turkey Chili
Brown Rice
Corn
And a touch of cheese
Reason I did the pie is because well For Nick.
He's been walking/jogging...not 1, not 2 but 4 miles 3 days a week!!! I'm SO proud of him and he requested this for dinner.
I agreed as long as it was my healthier version....he agreed.

MOnday 9-27-10

Breakfast:
None, UGH! When am I going to get on a breakfast schedule? There's just never time or I just forget!

This weekend was lovely and though I wasn't a great eater I made A LOT of good choices when faced with bad ones!
We went to IHOP and I ordered a meal that was 400 calories, Egg substitute scrambled, 2 slices of turkey bacon, 2 buttermilk pancakes, coffee black w/ 1 splenda packet, water.
I didn't eat the eggs..just didn't feel like it, 1 1/4 pancakes which I ate basically dry maybe 1 tbs syrup, turkey bacon and my only indulgence was a hashbrown w/ ketchup...yummy!
I also had some cake at a birthday party, a turkey dog, pinto beans and a teeny tiny ice cream cone w/ about 1 whole TBSP of ice cream. I loved those cute little cones..thanks Tonya for bringing them!
I also had some dinner at another party I tasted the yummies but gave my self small portions, it was way good! And my heel is really messed up, not so much pain but a burning senstation so I am taking care of it by not running but I am walking...did 2 miles w/ my cousin and the kids yesterday...Day was gorgeous for such a walk!
Now what to have for lunch?????

Lunch:
Veggie Burger, veg patty, lettuce, tomatoe and avocado
Water
Diet Soda

Snack:
Hand full of peanuts in sea salt

Snack:
Turkey dog...just the dog no bun ate it while I packed the kids for football.

Everyone had Ice cream for dessert, I wanted some :( but I resisted!

None...woke up baking and didn't stop until 5 o'clock!

A little over 1/2 a hotdog w/ relish,mustard on whole wheat bun

Snack:
Nit picked at cake shavings..yes shavings, what I carved off the cake to make it look like.... well like what I wanted it to!
Gonna go snack on something I'm peckish, and don't want to gorge on dinner.
SOOOOOoo tired.

Never got to that snack OR my run, which I think the run part was okay...my heel is not so good.

Dinner:
Had to eat on the run on our way to Dallas.
We stopped at McDonalds, had a Chicken sandwhich and diet soda.
I really love their SouthWest Salad..one of my favorites, but I don't like eating in the dark...just not that coordinated.

Tea...this was unsweetened with 1/4 of sweet tea. I was scared but it wasn't that bad! I'm not a fan of unsweetened things, especially teas they have an after taste that's too strong w/ out a sweetener...well for me anyway.

FOUND RUNNING SHOES! Can never go wrong w/ a pair of Asics!! Now to bump it up to 4 miles...wish me some luck!

I forgot that breaking in running shoes isn't fun.
Have no shinsplints, my arches feel great, my heel perfect but my toes hurt a bit...oh I hope I didn't choose poorly...these stupid shoes weren't cheap!

4 Homemade Mini meat pockets. I'm not sure what they are called, Amina taught me to make them.
The filling was lean ground turkey, parsley,Red Onion, and fat free sour cream.

Wednesday 9-15-10

Breakfast is the hardest meal for me. Honestly I wish I could do with out it. It's early, I have little ones to feed, lunches to make, two little heads of hair to tame. So stuffing something in my mouth is really that last thing I want to do.
BUT! yes there is a BUT.
If I don't eat breakfast I notice I'm prone to over eat, get super snacky and have two lunches!

So I pulled out my blender and decided HEY! I used to live off protein drinks in college and I felt fulfilled maybe I can do that every so often now.

This one came out pretty yummy and I had breakfast WHILE I folded laundry....talk about multitasking!
(Excuse my sad looking strawberry, had to use it before it goes bad.)



For this breakfast goody I used Soy Juice Plus which I've had a in my pantry a little too long! But it hasn't expired so that's a good thing.
1 Scoop Juice Plus, vanilla flavor
1 c soy milk
1c crushed ice
1 banana
Tiny touch of vanilla

Blend, blend, BLEND!
This was a yummy little drink but I think I could tweak it a bit more.
Next I wonder what I should try?  Orange julius? Hmmmmmm.

Lunch:
Wonderfully FREE!
Nick and I got coupons for a free Rooty Tooy Fresh and Fruity meal from IHOP.
Since they were about to expire we HAD to use them!
This is my first meal where I've eaten any animal in over a month!
1 egg
1/2 hashbrown
1 pancake (scraped off fruit and topping) no syrup
2 slices of turkey bacon
water
I ate to fell good didn't feel overly stuffed and I didn't deprive myself. Now don't get me wrong I wanted to scarf all those strawberries, whipped topping, gobble down some fried eggs and top it off w/ a coke.
But I didn't and this meal was OH SO GOOD! Better than ever...maybe because it was free!
I want to see if I can mostly stick to a veggie life style w/ an occasional indulgence.
I read so many blogs of women who eat healthy and allow EVERYTHING in their diet, but in moderation. Even an occasional indulgence.
Though I don't think I'll do EVERYTHING, I haven't eaten red meat or pork since 97 and I'm not starting now!

Dinner:
Lovely leftovers.

I hate tests!!
I hope I don't start eating out of nerves...I've noticed I do that at times.

Was it really worth the 100 calories?

Monday 9-13-2010 I am in love with Khobez.......

Khobez is a mediterranian bread that is oh so good!
I've been eating mine sparingly to make it last as long as it possibly can! I think I will have some w/ my lunch today...yes, yes I will.
(Tried posting a picture but Blogspot has been less than desirable as of lately when it comes to up loading photos...I think it's time to move to a new blog.)

Breakfast:
Banana

Lunch:
1/4 piece of Khobez bread (about the size of 1/2 a pita pocket)
Filled w/ mashed avocado and topped w/ left over Grilled veggies from last night.
3 TBS of Hummus for dipping
Side salad w/ mixed greens and cucumber topped w/ lite Raspberry vinegrette
Diet soda
Water

Yea looks a lot like a tortilla, but tastes totally different!

Side of Hummus and Piece of Khobe bread.

Dinner:

2 chimichangas w/ Whole wheat carb balance tortillas
1 filled w/ grilled veggies and brown rice
1 filled w/ "Meat" (Morning Star soy crumbles) and veg refried beans

on the side

I'm trying to get this food consumption thing right. But alas it's tough!
Am I that weak?
Is there just too much temptation?
Who knows, I'll get it one day...I'll do this right, when who knows but I think I will...or DIE trying!

none, me and my crew slept well past breakfast....GOTTA LOVE THE WEEKENDS!

Lunch:
We grilled us some burgers!
Veggie Burger w/ grilled veggies on top!
Fresh corn on the cob w/ Earth Balance butter, salt and pepper
Cherry coke zero

Snack:
Lebanese bread warm and fresh from the bakery...Sooo yummy!

Dinner:
1/2 Lebanese Bread (can't remember what it's called..kind of like a pita) Filled w/ grilled
Eggplant slices, onion, 3 kinds of bellpeppers, and mushrooms, also brown rice and parsley.
On the side some hummus. This meal was Fantastic! Thank you Amina for taking me to those wonderful grocery stores!

Dessert:
Small Pastry from the Bakery Amina took me to. Now I know why they are so petite in other countries! Their pastry servings are so small, but you eat it slowly and enjoy all the wonderful flavors and that's all you need...a small piece.

Late night snack:
Mamoul, tiny date cookie size of a nickel. I couldn't help it I found so much yumminess while out w/ Amina!

PopWoke up feeling BLAH, my sinuses are really bringing me down.
Not to mention I haven't run in a few days, weather has been rainy and last time I ran I did my run super fast and started cramping when I got close to the house.
My leg's hurt since and I don't risk running when I feel pain.
BUT Nie and I took a lovely walk yesterday and it started to rain on us....yay.

Breakfast:
none, had no appetite just had a cup of hot mint green tea...worked on my sinuses :).

Lunch:
Guacamole veggie burger..these are just so easy to make.

Vegan Mac/Cheese
Coke...I felt like a rebel today.

Super snacky!
Watched a movie w/ my three boys...we all shared some popcorn.
It's late I wanted something sweet..took a nibble of a peanut butter cup..yeah gross.
Then I made half a pb& j..that was gross too, so I ate some pretzel sticks...eeehh they were okay.
Ended the night w/ a hot cup of green mint tea (fresh mint from my garden)...I feel congested and this opened up my sinuses...for now.

*** I think my Vegan time is coming to an end. I'm almost all out of my vegan products and I'm thinking...did I lose tons of weight? NO
Did I notice a difference in myself? Yes
If so how? My complexion wants to clear up, my running is better, my belly less bloated
Were you planning a forever life change? No, I don't eat red meat or pork isn't that enough?
My goal was to see what I would notice after 30 days, I extended that because well I still had al ot of Toffu goodness and couldn't let it go to waste!
What I plan to do?
Try and keep my dairy to a minimum, cheese will be used sparingly, I will continue my water intake, Keep up w/ my running, and keep eating them veggies! I guess you could say I'll be a par-time veg head!***
I will continue to experiment w/ healthy creations...hey it's pretty fun!

Labor Day!

Weekend was wonderful! Though my diet was not here's to a new week!

Veggie Plate...spinach, mashed potato, squash, white rice, salad

Soy Mocha Frappuccino...shared w/ Nick.

Pulled weeds, cleaned up flower beds.

Dinner:
We grilled burgers, Veggie burger for me, Vegetarian Baked Beans, Tabbouleh and diet drink.

Diet Coke w/ real maraschino cherries....yum!

Sept.1st. Fall weather is around the corner!!

Fall weather is the best weather to run in...I love it!
Now that I have a sweet little partner to run with..even better!

I'm really trying to up my water consumption...I'm doing pretty good now if I good lay off the junk food I would be doing GREAT!

snack:
Veggie stick chips from Sprouts...never go there hungry :(

Lunch:
I believe they call these California rolls.
SOOOoo yummy!
While at Sprouts and Starving! I thought buy myself a salad and a drink or this sushi kit for 3 bucks??? I went w/ the kit.
Comes w/ Nori wraps, rice and soy sauce.
I had some lovely avocados at home and voila!
I even have enough wraps so I can have some for dinner. :P
















Snack:

I've been rather snacky today....
Nick had lunch I had already eaten my lovely Avocado rolls so I kept him company w/ a tall glass of water and 2 sopapillas...I wasn't too crazy about these sopapillas :(

Woke up feeling great no hurting muscles :).
But I have been waking up w/ a stuffy head..I hate when my sinuses act up this time of year!

5 morning star nuggets w/ Bbq sauce

Side salad w/ low fat Italian
Pizza....marinara and veggies, no cheese.
Ate way too many slices though...ugh not good.

Ran 2.0 miles w/ Nie...I usually hold her leash like usual, but tonight I tied her around my waist allowing me to use my arms. Not bad..she did quite awesome, no pulling on either end..good job Nie! You fantabulous pooch you!

There must be something to going Vegan.
I haven't run in a month and a half and I didn't feel like I was going to fall over, I didn't smell grossness coming out of my pores and I didn't feel out of breath! I felt like I could of gone another 2 miles! I probably would have if it wasn't so dark and I didn't have Nie.
Wow! Can't believe it! Now lets see how I feel in the morning.

Went to movies took my own butter free popcorn...mind you not calorie free, rather fattening actually.
Boston baked beans...one candy I found that has no milk product in it.
Shared a drink w/ Nick.

We actually had no dinner...I think I snacked on crackers..I can't remember :(

YOu know we forgot to eat dinner...or is it we ate lunch so late?

Today was the last day of my challenge I did it!
What did I notice from it?
Well my complexion is weird.
I have more energy, I'm tired but not dying of exhaustion.
I lost about 5 lbs, the bloating in my stomach has gone down a lot and I lost most of my weight in my back side.
Will I continue to Vegan it up?
For now I just might.
But not a hard core one...I'm really up for some cheese pizza!

Challenge Day 3

Okay so a few key things about being a vegan for 3 days in a row.
First off my system is going crazy!
I've had a few dizzy spells or more light headiness actually, gassy, peeing a lot and regular bowl movements.
What does all this mean???
Am I getting sick?
Well I looked up to see if this was normal or if I was going through some type of with drawl.
Nope I read this is perfectly normal and they call it detoxing.
Detoxing????
Okay well then we'll see how much "Lovelier" I feel in the next week and a half!

Breakfast"
1c Chocolate Silk
Cup of Whole Soy Strawberry yogurt.
This was ummmm interesting to say the least. I think I could get used to it but for now I swallowed it fast! I could of tossed it but for 1.70 a cup!! That sucker was not going to waste!

Lunch:
Tomato/Basil Noodles...one of those noodles in a cup deals.
Diet DP
Water

Snack:
2 peanut butter filled pretzels

Dinner:
1/2 a veggie burger w/ all the fresh veggie fixin's

Challenge Day 1

Breakfast:

Breakfast burrito.
Morning Star Meat Crumbles substitute
( I seasoned them trying to make it like Chorizo)
Vegetarian Beans
1 c Light Chocolate Silk

Lunch:
Quinoa w/ sauteed spinach, onions and bellpeppers.
Topped with a drizzle of olive oil, sea salt, and fresh tomatoe chunks.
Lemonade to drink...sooo hot needed something like this to refresh me!

snack:
Banana

Dinner:
Bowl of homemade black bean soup, just winged it and it came out way yummy!
Added two big Tablespoons of left over Quinoa

A Post.

I haven't posted in quite a while. I haven't eaten too well though I have still managed to lose weight maybe it's stress.
I still walk the Nie, which is great.
But I came a across a book and decided to give myself a health challenge.
I will be a vegetarian/vegan for 2 weeks post my meals and see if I notice subtle differences...especially my complexion.
What comes after if I do notice a difference?
If I do feel more energized?
I will omit a majority of animal products from my diet...again.
Those who don't know I was a vegetarian for 6 years prior to getting pregnant with Z.
I enjoyed it, I never felt too exhausted and my complexion.....Fabulous!
So I am off on my journey...my test...my challenge, starting........NOW.

Walked Nina in the am, mowed lawn in pm won't walk or run since the lawn mowing made my allergies act crazy!

Alright enough whining about new running shoes. I will be staying near some outlets this weekend and have to make it a mission to find new shoes. My calve & shin pain has now become heel and inner thigh pain.

I hurt

I seriously need to get out there and find some new running shoes!
Today I rested my legs, I couldn't walk Nina due to the weather. If the weather behaves I will take my stinker on a 45 minute walk.

Breakfast:
1 Buttermilk Pancake, with a bit of syrup
1 Slice of Turkey Bacon chopped and cooked with 1/4 c of egg beaters.
I drank a Caffeine filled Diet soda..I needed it!

Snack:
Sugar cookie...ugh so glad there are only two left...the boys can have them for dessert! Stupid yummy bakery sugar cookies!

Lunch:
Southwest Chicken salad (grilled Chicken) no dressing
A few of the boy's fries
Sweet tea (cotton pickin addiction)

Snack:
Soft serve low fat ice cream cone

Dinner:
Salad with grilled Chicken, this time I used some ranch.
This was a last minute dinner since I burned dinner last night! Yes, this would be the first time I've EVER burnt dinner.

Oh my legs!

Ran 4 miles this morning, too worried the rain might not allow me this afternoon.
Ran 2 alone and another 2 with Nina, I did more of a walk jog on the last 2 miles. My legs hurt...A LOT! I think I've reached my limit with these particular running shoes, they've reached their miles and I can feel it in my shins and calves.
I must go shop for some running shoes.
Wonder if the boys would whine bunches if I dragged them with me??
Yeah they probably would.

Breakfast: Special K Strawberry cereal

Lunch: Chili's veggie burger, with Avocado slices and half serving of fries.
Sweet Tea....HEY it was my anniversary Lunch!

Dinner:
Grilled Kabobs, made with 99% lean Turkey Breast, marinated in Teryaki and brushed with a bit of BBQ sauce. These were pretty yummy! The only veg we put on the stick was Onions.
Flavored Water

Dessert:
Slice of homemade Strawberry cake.
This cake is by no way calorie free, but I don't use frosting.
It's frosted with Cool Whip, topped with fresh strawberries and then Strawberry glaze.
Not a very sweet cake but one of my Nick's faves!

Boooooooooo!

With every good intention you'll have one of those days. Today was one of mine.
I had no work out today for it was my schedules rest day. For which I seriously needed due to my 4 mile push, 2 of those miles were fighting with Nie Nie...very spoiled.
Well today I had a great breakfast....Special K strawberry cereal.
Lunch: Ummmmm...Chicken taco salad and way too much sweet tea...bummer!
Snack: A 1/4 of a chocolate bar with full sized hazelnuts straight from France courtesy of my lovely neighbor Amina. Oh no one can make chocolate like the French...wonderfully sinful.
Dinner: Taco Bueno.
Oh my body is going to feel it at my 4 mile run tomorrow. I'm going to add a 45 minute walk to that run.....after all that junk I need it!

* On a good note I sweat up a storm walking around two different parks in 96 degree heat with Tonya and the kids...that counts for something right??***

Lazy gene????

Well I rested my leg on Friday, Well....I still have to walk Nina twice daily so is that really resting my leg?? But Nina being Nina (tad lazy)we strolled for our walk.
Saturday we were in the O.C and well they have more dips and ups than one can imagine. I ran only 3 miles and came home dead!! It's a seriously inclined kind of running route...yikes!
Sunday I got some more exercise in when we went on a long, hot and humid family walk around Nick's old elementary school. It was only 9 am and we were dying...like the boys and Nina I felt whiny..I'd rather run, at least while running I'm making my own breeze.
Nina kept trying to get on the right of Nick tripping him several times (we trained her to walk on our left), we soon realized she was trying to walk in the shade!
Once Nick stopped to point out something to the boys about the school, Nie took full advantage..she plopped on the cool shaded grass and panted.
Aren't Catahoulas working dogs????
This week I kick my running into high gear. I hope to hit 6 miles but will be happy with a consistent 4.
Wish me luck people, I have a few runs to train for.

I'm also trying to eat better so wish me luck on that too!

Breakfast:

1/2 c shredded raw has hashbrowns
a few chunks cut up raw onion
1 cage free egg
1/4 c salsa
Cooking olive oil spray.

Sprayed pan with cooking spray, sauteed onion and tossed in hashbrowns. Cooked until golden brown, a bit more spray, tossed in egg, cooked til done tossed in salsa until blended and warm.
Served with a bit of salt and pepper.

YUM!

Lunch:
Bean/cheese burritos in corn tortillas
Diet soda

Snack:
Flavored water
Special K Strawberry Crisps

Dinner:
Turkey Stir Fry
Made w/ 99% fat free turkey breast, bag of stir fry veggies, Stir fry sauce packet, 1/4 cup fresh cut onion, cooking spray.
I topped the stir fry over whole grain brown & wild rice....VERY yummy!
Sugar free fruit punch.

Ran 4.0 miles!! YAY!!! And drank a gallon of water afterwards.

Run a Palooza!

Well Nie and I have been a running!
I'm up to 3 miles, goal was 4 but Nie was quite bratty on Wednesday.
I think I slightly pulled a muscle with her so I had to sit out yesterday.
I will try again today and see if all's good. If not I will just continue on my walks and see what happens.

Slowly getting back

My 2 mile runs aren't as draggy anymore..is "draggy" a word?
Anyway Nina and I are making running progress, though my diet is pretty okay except for today. Had a field trip I helped out with and that meant yummy goodness.
To more runs with me and Ni, she's such a great little runner and cute to boot! Maybe next week we'll start hitting our 4 mile mark.

I know I know

I have to be the world's worst dieter, health kick person ever!
I truly have been naughty.
At my last entry I went down south to visit my mom who is the BEST COOK EVER!
Along with my baby sister who lives next door who is also the BEST COOK EVER!
A few extra pounds later I felt tired, lazy and oh so chunky.
But good news for now is weather is nice and hot and I am back on the pavement!
This time I have a running partner.
She has to have a job, her job makes her feel like she has a purpose therefore she won't eat my house, kids and dig up my yard.
She is FaraNina.
Nina for short but I break it down to Ni-Ni.
She's a 6 month old Catahoula leopard dog mix and she loves her some running.
She's a fantastic little running partner and gets a lot of wooo hooo's from strangers as we run by.
She IS quite the cutie!
But never fails when were right in front of Starbucks, she stops rolls her face in the grass and then plops.

So I give her a few to cool down, give her rump a good scratch and then we're off again.(Not to mention this gives me a chance to cool down Oh boy I hate starting over when it comes to running.)
I think Ni-Ni may be my golden ticket to keeping my rump down.
Hmmmmm????
Or she and I will both end up with big rumps, with a torn up yard and eaten window panes.
I think I like the skinny rump version better.

Day 57 should be Day 60!

I didn't blog the past few days and I have to add I wasn't good the past few days either!
I try to blog even when I eat poorly, this helps motivate me. If I see I ate junk I try not to eat it again because I don't want to write it.
But this weekend I can't honestly remember what I ate! Sunday I had like Popcorn, candy and diet soda at the movies...THAT I do remember..why? Because I was watching hunks on screen sandwiched between Karen and Tonya. Ahhh it was fun.
Back to food here's my daily intake so far.

Breakfast:
Nutrigrain bar

Lunch:
Mexican cup of corn from Fiesta
Cup of corn w/about 1Tbsp Mayo, 1Tbsp Creme, 1 TBsp Cheese and I added some chile and lemon juice.
I know this sounds gross to some ahem like Nick But it's so yummy!

Dinner:
Whole wheat Rigatoni with Turkey meat sauce a bit of mozzarella (baked in oven)

For lunch I decided to have a baby experiment with my salad.
I have some Herb Mix fresh ready made salad.
I took a good heaping of it, rinsed (even if it says "Ready to eat" I still rinse it.)
I tossed in 1/3 cup of canned mandarines, 2 TBSP cranberries, 1/2 oz of gouda and a bit of light Italian dressing and I crumbled 5 Ritz crackers for crunch.
This salad was way yummy!

2xTostadas w/ lean ground turkey, gouda, fat free beans, lettuce

Yeah that's what I'm baking as of now...it has no sugar. Instead it has 4 VERY ripe bananas, light agave nectar and natural applesauce. I wonder if it will taste good?

All I know is that it smells super yummy as it bakes!

Alright I haven't been posting but I haven't been horribly bad or horribly good either.

I've had a bit more sugar than usual and honestly paid the price every night with heart burn!
On a good note I am down 10 lbs, haven't weighed myself this morning but wouldn't be surprised if the lbs inched up a few these past few days.

I made this pizza out of this Pita Bread. The bread is only 60 Calories a slice and oh so good.




I then took a few TBS of diced onion, a whole roma tomato, 1 slice of three kids of bellpeppers, and 1/2 a crimini mushroom. I sauteed the veggies in olive oil spray until tender.
I pretoasted the pita on a cookie sheet at 350. Then took out my pita topped with veggies, 1 oz Gouda and Italian seasoning. Popped back in oven until cheese was melted and VOILA lunch is served.

Snack:

Medium Grapefruit- 41 Calories

Day 12

I still find myself batteling with breakfast.
There are days I have to force myself to eat it, today was one of them so I made it quick and lazy.

Breakfast:

Strawberry Special K-120 Calories
Medium Banana-105 Calories

Lunch:

Taco Salad
I didn't want my yummy spiced up ground Turkey to go to waste so I had to finish it off. How else but in a salad.

Instead of a shell I cut up a corn tortilla, sprayed some olive oil spray on it and tossed it with chile powder and salt.
Popped in 350 degree oven until crisp.

Finished product.



I put some shredded lettuce, topped with 1/4 of chopped tomato, 1/2 oz of Gouda (love this!), and topped with the left over ground turkey(warmed up of course) and chips.
The spices in the meat were perfect that I didn't need any salad dressing!



This healthy serving comes to......only 203 Calories!

Needless to say this will not be the first and last time I make this!

Has alot of calories but all that when in was good for ya...I hope.

few banana slices (about 1/4 of a med .banana)

I combined these and it was yummy.
ORIGINALLY I used Oikos Vanilla Organic Greek Yogurt but I took one bite and spit it out!
The yogurt just wasn't for me! I've had the Strawberry one and loved it! But WOW this was pretty bad.
Only thing I had left was the boys Yogurts...Cherry crush cups.
But it turned out okay so now I'm on a mission to find a good Vanilla yogurt!

Rare Treat!

Nick came home early with a hail car to work on in the garage. So we went to lunch...cheap lunch.
I told him I had to try and eat healthy...no drive thrus AND it was on me since my commission check came in.
We ended up at Burger Island.

Here's the damage.

Veggie Burger w/ American, pickles, onions, tomato and tons of lettuce. I only ate about half the bun but still this is my guesstimate. -470 Calories

I have to admit it was hard to say no to fries, especially there! To make matters worse they accidentally brought me fries and when I told them I didn't order any they said I could keep them for free. She must of seen the panic in my face and said only if I wanted them. I told her no because I know they have the best fries and I would of started with one and had the whole basket before I knew it. She took them back...phew that was a close one! I'm not that strong yet...not yet.
= 470 Calories

Snack while running errands

Day 10

Trying something..... I've been good and have not given myself any cheat days. Not to say I will not indulge once in a while.
But I think one thing I will try to do is not have any fast food. Sometimes I try buying a smaller meal or swapping this for that but all it does is feed the desire to keep eating junky.
So this is my small challenge for me no fast food, trying to cook fresher meals...OH and to try and go to bed before midnight!

What I've noticed:

I've noticed my eating habits are better than this past holidays but I would like to consume more fresh fruit.
If I snack at night I would like it to be something with Fiber, fruit, cereal or a yummy parfait!
Blast those yummy single servings of Pringles! Does anyone have any snack suggestions for anytime of the day?

Day 9

Breakfast:

Lemon Square- 58 calories
=348 calories

Snack: Lemon Square-58 calories

So far 546 Calories

Okie Dokie girls here's the recipe for yesterday's lemon squares which are pretty yummy.

1 3/4 c flour
1/3 c plus 3 TBS confectioner's sugar
1/3 c margarine ( I used Smart Balance)
1 1/3 c sugar
1 TBSp grated lemon rind
1 tsp baking powder
3 egg whites
1 egg
1/3 c plus 1 TBSP lemon juice
1/2 tsp butter extract (didn't have any so I omited)
13x9x2 pan

Heat oven to 350.
In a medium bowl combine 1 1/2 c flour and 1/3 c of confectioners sugar, cut in the margarine with a pastry cutter or two knives ( I used my fingers) until mixture resembles coarse meal.
Press the mixture firmly and evenly into the bottom of baking pan. Bake 20 minutes or until lightly browned.( I only baked for about 10 minutes...my oven runs hot).
Combine sugar, remaining 1/4 c flour, lemon rind, baking powder, egg whites and egg in a medium bowl and blend with a whisk.
Stir in the 1/3 c lemon juice and butter extract. Pour the mixture over the prepared crust.
Bake 20 minutes or until set.
In a small dish combine the remaining 3 TBS confectioner's sugar and 1 TBSp lemon juice to make a glaze.
Carefully spread the glaze over the hot lemon squares. Cool completley in the pan and cut into squares.....Then enjoy!

Dinner....The experiment!

For Dinner I had no idea what to make but knew it had to be healthy.

So I cooked 1 1/2 cubed ckn breasts with 1 scoop "Grandmothers Sunday Roast Seasoning" from Homemade gourmet.

In the meantime I boiled a bag of brown rice.

When the chicken was done I added the rice to the chicken, along with 1/2 c frozen corn and peas.
1/2 cup of water and a 1/2 scoop of Seasoning.

I let this cook and it smelled up my whole house with yumminess!!
It was just as yummy too!!
I over did it to where I was stuffed!

1 1/2 servings-460 calories (this is a guesstimate)

Late night snack:

Lemon Square- 58 Calories

Total 1064 Calories

Day 8

Had no breakfast today...quite honestly I just didn't feel like eating. I know I will pay for this in major hunger later.

Lunch:
Vegetarian Vegetable soup - 180 calories
buttery crackers- 140 calories
Total 320 calories

Dinner:
Chicken tacos in corn tortillas w/avocado, lettuce, tomatoe and cheese-325 Calories
Side of Fat free refried beans- 100 calories
Diet coke-0
Total- 425 calories

For a few days now I have been wanting to experiment with a dessert from my Trim and Terrific cookbook. Tonight I decided on Lemon squares.

I'm not sure how they taste in a whole just yet. I did taste a corner and it's a bit on the tart side but that's okay I love tart!
