Challenge Day 1

Breakfast:

Breakfast burrito.
Morning Star Meat Crumbles substitute
( I seasoned them trying to make it like Chorizo)
Vegetarian Beans
1 c Light Chocolate Silk

Lunch:
Quinoa w/ sauteed spinach, onions and bellpeppers.
Topped with a drizzle of olive oil, sea salt, and fresh tomatoe chunks.
Lemonade to drink...sooo hot needed something like this to refresh me!

snack:
Banana

Dinner:
Bowl of homemade black bean soup, just winged it and it came out way yummy!
Added two big Tablespoons of left over Quinoa

  1. It's a grain,like bits of rice almost...not bad rather nutty tasting.

  2. hmmm, sounds interesting. i wonder if it's on the southy beach list. so so you cook it like a rice or combine it like a spice?

  3. It kind of cooks like rice, it's like a 2 step process but you just use water..easy.
    How's the South Beach coming along? Do you feel tortured w/out the carbs?

  4. i have a horrible headache. i am not sure if the lack of carbs, sugar, cokes, or waking up too early for my jogs.....
