As you can see from the blog we almost never eat out. We're on a budget and well we all know it's cheaper to eat in.
But Nick took us to CiCi's today for dinner,this was a rare treat and the boys were thrilled.
I usually eat salad, soup and a slice or two of pizza.
But since this is rare I ate....alot. I couldn't get myself to skimp...I had to eat my money's worth!

Day 23...stuck in a rut!

I'm stuck in a rut. I feel blah and desperately miss running. I love running, it's time for myself collecting my thoughts, thinking about my day and what the heck I'm going to make for dinner. But every time I look at my running shorts I feel blah again and curl up on my couch.
Maybe this week will be the week! It just might be.

Karen made a comment on her blog on how she felt bad after eating poorly and how it wasn't worth it. Funny thing is I serioulsy don't feel all too bad. I feel a bit bloated but thats about it. Well I thought too soon because around midnight last night my GERD acted up REAL bad. I thought I was going to die! It was so bad it made me feel nauseous and faint....Nick came to my rescue with a magic pill and water. Who knew eating well for about 3 weeks and going naughty for a weekend could cause such havoc in my stomach. I think it was the nachos...it had to be!

I made this pizza out of this Pita Bread. The bread is only 60 Calories a slice and oh so good.




I then took a few TBS of diced onion, a whole roma tomato, 1 slice of three kids of bellpeppers, and 1/2 a crimini mushroom. I sauteed the veggies in olive oil spray until tender.
I pretoasted the pita on a cookie sheet at 350. Then took out my pita topped with veggies, 1 oz Gouda and Italian seasoning. Popped back in oven until cheese was melted and VOILA lunch is served.

Snack:

Medium Grapefruit- 41 Calories

Dinner:

2 chicken Tamales-300 Calories (taken from thedailyplate.com)

Day 12

I still find myself batteling with breakfast.
There are days I have to force myself to eat it, today was one of them so I made it quick and lazy.

Breakfast:

Lunch:

Taco Salad
I didn't want my yummy spiced up ground Turkey to go to waste so I had to finish it off. How else but in a salad.

Instead of a shell I cut up a corn tortilla, sprayed some olive oil spray on it and tossed it with chile powder and salt.
Popped in 350 degree oven until crisp.

Finished product.



I put some shredded lettuce, topped with 1/4 of chopped tomato, 1/2 oz of Gouda (love this!), and topped with the left over ground turkey(warmed up of course) and chips.
The spices in the meat were perfect that I didn't need any salad dressing!



This healthy serving comes to......only 203 Calories!

Needless to say this will not be the first and last time I make this!

I combined these and it was yummy.
ORIGINALLY I used Oikos Vanilla Organic Greek Yogurt but I took one bite and spit it out!
The yogurt just wasn't for me! I've had the Strawberry one and loved it! But WOW this was pretty bad.
Only thing I had left was the boys Yogurts...Cherry crush cups.
But it turned out okay so now I'm on a mission to find a good Vanilla yogurt!

Rare Treat!

Nick came home early with a hail car to work on in the garage. So we went to lunch...cheap lunch.
I told him I had to try and eat healthy...no drive thrus AND it was on me since my commission check came in.
We ended up at Burger Island.

Here's the damage.

Veggie Burger w/ American, pickles, onions, tomato and tons of lettuce. I only ate about half the bun but still this is my guesstimate. -470 Calories
Giant glass of water-0

I have to admit it was hard to say no to fries, especially there! To make matters worse they accidentally brought me fries and when I told them I didn't order any they said I could keep them for free. She must of seen the panic in my face and said only if I wanted them. I told her no because I know they have the best fries and I would of started with one and had the whole basket before I knew it. She took them back...phew that was a close one! I'm not that strong yet...not yet.
= 470 Calories

Snack while running errands

Day 10

Trying something..... I've been good and have not given myself any cheat days. Not to say I will not indulge once in a while.
But I think one thing I will try to do is not have any fast food. Sometimes I try buying a smaller meal or swapping this for that but all it does is feed the desire to keep eating junky.
So this is my small challenge for me no fast food, trying to cook fresher meals...OH and to try and go to bed before midnight!

Okie Dokie girls here's the recipe for yesterday's lemon squares which are pretty yummy.

1 3/4 c flour
1/3 c plus 3 TBS confectioner's sugar
1/3 c margarine ( I used Smart Balance)
1 1/3 c sugar
1 TBSp grated lemon rind
1 tsp baking powder
3 egg whites
1 egg
1/3 c plus 1 TBSP lemon juice
1/2 tsp butter extract (didn't have any so I omited)
13x9x2 pan

Heat oven to 350.
In a medium bowl combine 1 1/2 c flour and 1/3 c of confectioners sugar, cut in the margarine with a pastry cutter or two knives ( I used my fingers) until mixture resembles coarse meal.
Press the mixture firmly and evenly into the bottom of baking pan. Bake 20 minutes or until lightly browned.( I only baked for about 10 minutes...my oven runs hot).
Combine sugar, remaining 1/4 c flour, lemon rind, baking powder, egg whites and egg in a medium bowl and blend with a whisk.
Stir in the 1/3 c lemon juice and butter extract. Pour the mixture over the prepared crust.
Bake 20 minutes or until set.
In a small dish combine the remaining 3 TBS confectioner's sugar and 1 TBSp lemon juice to make a glaze.
Carefully spread the glaze over the hot lemon squares. Cool completley in the pan and cut into squares.....Then enjoy!

Dinner....The experiment!

For Dinner I had no idea what to make but knew it had to be healthy.

So I cooked 1 1/2 cubed ckn breasts with 1 scoop "Grandmothers Sunday Roast Seasoning" from Homemade gourmet.

In the meantime I boiled a bag of brown rice.

When the chicken was done I added the rice to the chicken, along with 1/2 c frozen corn and peas.
1/2 cup of water and a 1/2 scoop of Seasoning.

I let this cook and it smelled up my whole house with yumminess!!
It was just as yummy too!!
I over did it to where I was stuffed!

1 1/2 servings-460 calories (this is a guesstimate)

Late night snack:

I can't believe how horrible my muscles feel, I feel worse today than I did yesterday. I almost feel sick. I think I will sit out the work out again today...maybe a brisk walk on the tread mill

Dinner:

Southwestern Shrimp and Black bean chili:

I got this recipe from a cook book called Trim & Terrific.
I'll write the recipe as the book had it but whats in parenthesis is what I actually used.

1 grn bell pepper,chopped (2 TBSP)
1 red bell pepper, chopped (2 TBSP)
1 lrg onion, chopped (3 TBSP)
1 cup shredded carrot (1/2 c)
I TBSP finely shredded jalapeno (omitted)
1/2 tsp minced garlic (used powdered to taste)
1 TBSP chili powder ( used to taste)
1 1/2 tsp cumin (used to taste)
1 14 1/2 oz can chopped tomatoes, w/juice (only had stewed tomatoes)
1 16 oz black beans, drained and rinsed
1/2 c water (used 1 cup)
1 lb med. shrimp, peeled (used 1 c frozen)
1 -10oz package of frozen corn (didn't have any on hand)
(One reason I changed what I used is to make it just for me....my guys won't touch this stuff)

Coat pan with nonstick spray and saute green and red peppers, onion, carrot, jalapeno and garlic until tender, about 6-8 minutes.
Stir in the chili powder, cumin, tomatoes, black beans, water, and shrimp: bring to a boil and cook for 5-10 minutes or until the shrimp are pink. Add corn and continue to cook for 5 minutes longer.



Even with my twist due to not having all ingredients on hand it came out pretty good.
I think I will make this again...I think it needed a little something.

Day 2

Woke up incredibaly sore and by all means did not want to get out of bed today....why am I so tired?

Breakfast:
Oatmeal w/ raisins.

I took no pics because we've all had oatmeal right?

I just followed the directions on the carton and added a twist.

1/2 c oats
1/2 c water
1/4 cup low fat milk
pinch of salt
1 tsp cinnamon
1/2 TBSP agave Nectar ( I actually used 1 TBSP but it was too sweet for me)
1 Tbsp raisins or cranberries


I just put the water and salt to boil, then added the milk,cinnamon and agave. Brought to a rolling boil and added the oats cooked for 4 minutes then added the raisins and cooked for another minute.

This was pretty yummy.

Drank with Diet Coke...needed caffeine BAD! 0 calories 0 points

Lunch:
Chicken Noodle Soup 120 calories 3 points
Glass of water -0

I'm sore, sleepy and need to do some grocery shopping. Maybe tomorrow I will be a bit more creative food wise.

Day 1

This morning I woke up ready to get into my new eating habits.
First up was actually eating breakfast.
I honestly can't remember eating breakfast in quite a while. I do but we eat it as a brunch or lunch.

This morning I experimented. I had 3 egg whites left over from some eggs that I separated last night. So I thought I will make me a egg white omelet.

2 TBS Chopped tomato
2TBS Chopped Onion
3TBS chopped thawed out broccoli
3 egg whites
salt and pepper to taste

Total calories....203 Points 4

I just sauteed the veggies in olive oil, added a pinch of salt and pepper threw in the egg whites and it was done.
It was good but I felt like it was missing something.









Maybe it was missing some cheese. I think next time I will try it with a little bit of Gouda.

I also drank a glass of water with my breakfast.

Lunch I am unsure, I am going to a play date at McDonald's, I'm a strong girl I can over come the temptation.


LUNCH:

Spinach Enchiladas.



Well I had me a rather late lunch.
I used some of the left over spinach to make myself some spinach enchiladas.
If any of you gals enjoy spinach this is how I made them (these are single serving ingredients) and I made up as I went along.


2TBS onion
2TBS chopped tomato
1/2c spinach..packed (frozen kind)
2 TBS pureed Chile Ancho
1/2 c water
1/4 tsp garlic powder
1/4 tsp cumin
salt and pepper to taste
2 corn tortillas
1 mozzarella cheese stick

I just sauteed the onion and tomato in Olive oil, then added the spinach and 2 TBS of chile puree along with the 1/2 cup of water, cumin and garlic powder.
I allowed this to simmer so the spinach could take in the yummy seasonings.

Next I warmed up my two corn tortillas in the microwave until soft.
Took the spinach mixture and filled and rolled my tortillas. I left a bit of mixture to top my enchiladas.
Then I grated my cheese stick and topped my enchiladas and popped them in the oven for a few minutes until the cheese melted. ****cheese stick mozzarella does not melt too well...but thats all I had***Also if you don't have chile ancho paste or have no idea what it is use chile powder...I swear by chile powder!*****

I had this with a Diet Cherry coke Zero. Will post the calories and points later this evening.

These work out programs always had me skeptical. But I got one from John and Debbie for Christmas (Thank you John and Debbie!).
I always thought to myself....give me a good pair of running shoes and fresh air anyday..NOW thats how you lose weight.
Well I eat all my words and thoughts because this program kicked my booty!!!!
I was huffing, puffing and almost swearing at the television. And walked funny all the way to the computer to log my info!
Note if you decide to buy this program....In line skating is a BEEEEEEEPPPPP!!!
